Instructions: Cook pasta in a large pan of boiling salted water.
Drain well and set aside. *Prepare the sauce: Dice onion and bacon. Slice mushrooms. Heat oil in a pan. Add onion, bacon, garlic and cook 3 minutes until onion is softened. Add mushrooms and cook, stirring, 2 minutes. Add wine and stir through for 2 minutes until mushrooms are soft. Stir in cream, bring to the boil and simmer 3 minutes. Remove from heat, stir in egg, cheese and parsley and cook over low heat until thickened. Do not boil once egg is added. Season well. Toss through pasta and serve. Email this Recipe:
