Ingredients:

250 gm tagliatelle
1 tbl olive oil
1 x onions, medium
1 tsp garlic, crushed
4 slc bacon
250 gm mushrooms
1/4 cup white wine
1 cup cream
1 x eggs
1/4 cup parmesan cheese
2 tbl chopped fresh parsley
Instructions:
Instructions: Cook pasta in a large pan of boiling salted water.

Drain well and set aside.

*Prepare the sauce:
Dice onion and bacon. Slice mushrooms.

Heat oil in a pan. Add onion, bacon, garlic and cook 3 minutes until onion is softened. Add mushrooms and cook, stirring, 2 minutes. Add wine and stir through for 2 minutes until mushrooms are soft.

Stir in cream, bring to the boil and simmer 3 minutes. Remove from heat, stir in egg, cheese and parsley and cook over low heat until thickened. Do not boil once egg is added. Season well.

Toss through pasta and serve.
