Instructions: Put the oil, garlic and onion into a large frying pan and cook over low heat for 2 minutes. Add the anchovies and stir with a wooden spoon until melted, about 4 minutes.
Add the artichoke hearts and mint leaves to the mixture. Season to taste with salt and pepper. Add water, cover and simmer until artichokes are cooked - about 20 minutes if fresh or 10 minutes if frozen and thawed. If necessary, add a little extra water. Sprinkle with the lemon juice and bread crumbs. Toss and cook 2 more minutes. Taste for seasoning and lemon flavor. Add a little extra juice, if desired. Transfer to a shallow serving dish and cool.
