4 x boneless skinless chicken thighs (abt 3/4 lb total)
1 tsp seasoned salt
Pineapple Salsa (see recipe)
Instructions:
Instructions: Lay chicken flat and sprinkle both sides with seasoned salt.

Preheat a grill pan or nonstick skillet over medium heat. Add chicken and cook 6 minutes. Turn and cook 4 to 5 more minutes, or until no longer pink inside.

Serve topped with Pineapple Salsa and with Carrot Salad on the side.

This recipe yields 2 servings.
