1 tbl canola oil
1 sm onion chopped
1 x cubanel (frying) pepper seeded and chopped
5 x plum tomatoes peeled, seeded, and
chopped
3/4 oz canned black beans rinsed and drained
1/2 tsp hot sauce
1/2 tsp sea salt
Instructions:
Instructions: In a deep-sided 12-inch skillet, heat oil over moderately high heat. Add onion and pepper and saute until vegetables just begin to wilt for about 2 minutes. Add tomatoes and cook, stirring, for 2 minutes more.

Add black beans, hot pepper sauce, and salt. Cover and cook until heated through to about 3 minutes. Remove from heat and stir in cilantro.
