125 gm butter
3/4 cup castor sugar
2/3 cup steamed, mashed potato (cool)
1/3 cup carob powder
2 x eggs (lightly beaten)
1 cup rice flour
1/2 cup soy flour
2 tsp baking powder
Instructions:
Instructions: Carob is used as a substitute for chocolate.

Preheat oven to 175C (350F).

Grease 20cm (8") cake tin.

Cream butter and sugar in a large bowl.

Add mashed potato, beat well.

Gradually beat in eggs.

Sift flours, baking powder and carob together.

Fold in flour mixture alternately with milk, blend well.

Pour into prepared tin and bake for 40 - 50 minutes.
