1 cup All-purpose flour
1 tsp Double-acting baking powder
1 tsp Salt or to taste
1 cup Milk
1 lrg Egg
1/4 cup Unsalted butter (1/2 stick) melted
1 cup Carrot puree
Melted unsalted butter for brushing the griddle and the blini
Instructions:
Instructions: Into a bowl sift together the flour, the baking powder, and the salt. In another bowl beat the milk, the egg, and the butter until the mixture is just combined and stir in the flour mixture. Add the carrot puree and combine the mixture well. Heat a heavy griddle over moderately high heat until it is hot and brush it generously with melted butter. Spoon tbsp. of batter onto the griddle, spreading the batter with the back of a spoon to form 3-in. rounds, and cook the blini for 1 to 2 minutes, or until the undersides are golden brown. Turn the blini and cook them for 1 minute more, or until the undersides are golden brown. Transfer the blini as they are done to an ovenproof platter, brush them with melted butter, and keep them warm, covered in a preheated very slow oven (200F.). Serve the blini with the scallion cream cheese sauce.
