125 gm butter
125 gm sugar (caster)
1 tbl Honey
60 gm walnuts
2 x eggs
125 gm flour, self-raising
1/10 tsp salt
1/2 tsp bicarb of soda
1 tsp cinnamon, ground
1 cup carrots, medium
Instructions:
Instructions: Roughly chop the walnuts. Grate carrot.

Cream butter and sugar until light and fluffy. Beat in honey, walnuts, and beaten egg. Sift dry ingredients together and fold into mixture. Last fold in carrot.

Place mixture in a lined, greased lamington tin and bake in oven for 25 minutes at 350F.

Serve with afternoon tea.
