1/2 cup Cooking oil
2 cup Grated carrots
1 cup Chopped nuts
1 tsp Cinnamon
1 tsp Soda
1 cup White sugar
1 cup Dark brown sugar
2 cup Self rising flour
4 x Eggs
1 pch Salt
----------------- ICING ----------------
1 pkt (8 oz) cream cheese
1 tsp Vanilla
1/2 stk melted butter
1 cup Chopped nuts
Instructions:
Instructions: Cream oil and sugar. Add eggs one at a time. Add carrots, flour, salt, cinnamon and soda. Fold in nuts. Bake at 30-35 min. in 2 X 9 layers.

ICING: Mix until smooth. Spread on cool cake.
