Ingredients:
Amount Ingredient
2 lb carrots peeled and cut into 1 inch thick slices
5 x scallions white part only thinly sliced
1 cup fresh coriander leaves
dressing:
5 tbl fresh lemon juice
2 tbl fresh orange juice
2 tbl white wine vinegar
1 tsp ground cumin seed
1 x spoon ground coriander
2 tsp honey
Instructions:
Instructions: In a large pot of boiling water cook carrots for 2 minutes.

Rinse under cold water to stop cooking and drain.

In a large bowl combine carrots scallions and 3/4 cup of coriander.

In a small bowl whisk all dressing ingredients together until smooth.

Toss carrot mixture with dressing and sprinkle with remaining coriander leaves.
