2 cup flour
1/2 tsp baking soda
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
2 cup sugar
1 cup vegetable oil
4 x Eggs
1 can crushed pineapple drained (8 oz.)
2 cup carrots grated (about 5)
1 cup flaked coconut
1 cup walnuts optional FROSTING
1/4 cup butter softened
4 oz cream cheese softened
1 cup powdered sugar
Instructions:
Instructions: Preheat oven to DGF-350.
Combine flour, baking soda, baking powder, salt and cinnamon. Add sugar, oil and eggs and mix well.

Blend in pineapple, carrots, coconut and 1 cup chopped walnuts if desired. Pour batter into greased and floured 9 by 13 inch cake pan. Bake 30-40 minutes, dont underbake.

When cake has cooled, frost with cream cheese frosting.

FROSTING: Combine butter, cream cheese, powdered sugar and vanilla until the mixture is creamy.
