Ingredients:

1/2 cup Wesson oil
2 cup sugar
2 cup flour, sifted
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
4 x eggs
3 cup raw carrots, grated
1 cup pecans, finely chopped
----------------- FROSTING ----------------
8 oz cream cheese, softened
1/2 tsp vanilla
1 lb powdered sugar
Instructions:
Instructions: Cake:
Combine oil and sugar; mix well. Sift together remaining dry ingredients.

Sift half of dry ingredients in sugar mixture and blend. Sift in dry mixture remaining and eggs (one at a time) alternating them into sugar mixture, mixing well after each addition. Add carrots and mix. Add pecans and pour into a lightly oiled pan (13 1/2x9-inches). Bake at 325 degrees for 35 to 40 minutes.

Frosting:
Beat all ingredients until creamy and spread on cooled cake.
