Instructions: Melt butter, saute onions until well-softened. Add carrots and ginger.
Cook another 5 minutes or so. Add stock, bring to a boil, and simmer 20 to 30 minutes. Puree and return to pan. Add juice and zest, and milk or cream. Add more milk or stock if too thick. Makes about 8 cups. NOTES : NOTES : Email this Recipe:
