Instructions: Using the grater attachment on a food processor or a hand grater (on the side with the large holes), shred the carroet.
Transfer the carrots to a bowl and add the parsley, walnuts, vinegar, oil, salt, and pepper. Toss well to thoroughly saturate the carrots with the seasonings. Divide the lettuce among 6 plates.
