Instructions: Preheat oven to 350 F. Grease and flour a loaf pan or small ring pan.
Mix sugar and applesauce in a large bowl. Combine dry ingredients and add the to wet mixture. Add carrots and vanilla. Beat in the eggs one at a time. Mix well. Stir in the optional nuts and raisins. Pour into the pan and bake for 50 minutes, or until a toothpick inserted in the bread comes out clean. Variation: Add 1/2 cup crushed pineapple (in juice, drained) to the batter. Email this Recipe:
