1 lb baby carrots
1 tbl olive oil
1/4 cup chopped shallots
1/2 cup low-fat low-sodium chicken broth
1 tsp lemon juice
1/2 cup water
Salt to taste
Freshly-ground black pepper to taste
1/2 tbl minced fresh parsley
1/2 tbl minced fresh dill
Instructions:
Instructions: Combine all ingredients except the herbs in a saucepan and cook over medium heat until carrots are tender, about 5 to 8 minutes. Add the fresh herbs and toss well; cook for 1 more minute.

This recipe yields 6 servings.

Serving size: 1/2 cup.
