1 cup Lightly toasted cashews
2 tbl Toasted sesame seeds
1 tbl Minced garlic
1/3 cup Finely chopped green onions
1/2 cup Dry bread crumbs, Panko preferred
1 lrg Egg, plus
1 x Egg white, lightly beaten
1/4 cup Low-fat yogurt
1/4 cup Low-fat ricotta or cottage cheese
1 tsp Grated lemon zest
2 tbl Chopped chives, optional
1/4 tsp Cayenne pepper
1 tsp Sea salt
Instructions:
Instructions: Add cashews to a food processor and process in short bursts until finely chopped but not ground. Transfer to a mixing bowl and stir in the sesame bread crumbs. In a separate bowl stir the eggs yogurt, ricotta, zest, chives, cayenne and salt. Stir this into the nut mixture until well combined. Form into 6 patties and cook in olive oil in a saute pan over moderate heat until golden brown on both sides. Serve immediately with your choice of a savory sauce or topping.

This recipe yields 4 to 6 servings.
