Ingredients:

200 gm frozen blackcurrants
200 ml creme de cassis
500 ml demi glace (qv)
1 x salt and pepper
Instructions:
Instructions: Cook the blackcurrants with the creme de cassis and reduce by one third.

Add the demi glace and reduce by half or to the consistency of a nice sauce.

Season with salt and pepper then pass through a double layer of muslin.

To finish add a few fresh blackcurrants.

Serves 4
