Ingredients:
Amount Ingredient
12 x Uncooked pearl barley
2 pkt Frozen lima beans, thawed
3 x Fresh tomatoes, or 19oz can
1 lrg Onion, chopped
2 x Cloves garlic, minced
Salt and pepper, to taste
1 x Bay leaf
2 tsp Sugar
5 tbl Parsley
1/2 tsp Basil
1/3 cup Chicken broth
Instructions:
Instructions: Put sausage in cod frypan. Pour wine half way up sausages. Cover and steam for 15 mins. Remove cover and saute until brown. Remove from frypan. Using a little of the sausage fat, saute the onions and garlic. Add tomatoes, bay leaf, pepper, basiland sugar. Simmer 3 mins. Add broth and 1/2 cup wine.

Add beans , sausage and 3 tablespoons of parsley. Cover and cook 45 mins.

Add salt and pepper to taste. Sprinkle with remaining parsley.

Serves 6-8
