Instructions: Preheat oven to 475 degrees. Sift together dry ingredients. Cut in shortening to resemble coarse cornmeal. Add milk until mixture pulls away from sides of bowl. Take handfuls of dough (about the size of a cats head (thus cat head biscuits)) in floured hands and drop into buttered cast iron skillet. (Make sure wooden handle is removed if it has one as this will be placed in oven to cook). Brush tops with melted butter and bake in oven until tops are golden. (12 to 15 min.)
