16 oz uncooked rotelle pasta
2 cup water
20 oz fresh spinach stems removed
2/3 cup raisins divided
2 tsp olive oil
4 tsp balsamic vinegar
1/2 tsp salt
1/4 tsp freshly-ground black pepper
2 x garlic cloves minced
Instructions:
Instructions: Cook pasta according to package directions, omitting salt. Drain; set aside.

Bring water to a boil in large saucepan over high heat. Add spinach; cook, covered, 3 minutes or until spinach leaves start to wilt. Remove from heat. Stir in 5 tablespoons raisins, oil, vinegar, salt, pepper and garlic.

Place in food processor or blender; process until smooth. Add remaining raisins and pasta. Sprinkle with pine nuts.

This recipe yields 6 (2-cup) servings.
