2/3 cup sugar
1/2 tsp salt
1/2 tbl cornstarch
1 tbl all-purpose flour
3 cup milk
3 x egg yolks -- beaten
1 tbl butter
1/2 tsp vanilla extract
3/4 cup shredded coconut -- moist
1 x 9 inch baked -- fluted pastry crust
----------------- Meringue ----------------
3 x egg whites
1/4 tsp cream of tartar
6 tbl sugar
1 tsp vanilla extract
Instructions:
Instructions: Mix sugar, salt, cornstarch, and flour in a saucepan. Gradually stir in milk; cook over moderate heat, stirrng constantly until mix- ture thickens and boils. Boil for 1 minute. Remove from heat. Slowly blend in beaten egg yolks. Cook for 1 more minute. Remove from heat. Blend in butter, vanilla, and coconut. Pour into pastry crust. Preheat the oven to 400.

Beat egg whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Pile onto pie filling; sprinkle with extra coconut. Bake for 8 to 10 minutes or until brown.

Makes 6 to 8 servings.
