1/2 lb cauliflower
1 sm red bell pepper, chopped
1 sm green bell pepper, chopped
1 x clove garlic, minced
2 tbl cornstarch
1/2 cup milk
3 tbl butter
1 tsp salt
1/4 tsp pepper
1 cup Jack cheese, shredded
2 tbl fine dry breadcrumbs
Instructions:
Instructions: Separate cauliflower into flowerets. Drop into boiling salted water.

Cook 5 minutes or until tender crisp; drain. Arrange in a shallow 2-qt.

well buttered, baking dish. Heat 1 tablespoon butter in frying pan. Add peppers and garlic. Saute for 1 1/2 minutes. Sprinkle over cauliflower.

Mix cornstarch into milk. Add 2 Tablespoons butter to frying pan. Stir in milk and cornstarch; cook, stirring until thickened. Add salt, pepper and cheese. Stir until cheese is blended in. Pour over vegetables. Mix breadcrumbs and 1 tablespoon melted butter; sprinkle on top of casserole.

Bake at 350 degrees for 25 minutes. Or, cover and refrigerate; bake for 35 minutes if chilled.
