Ingredients:

1 tbl Olive oil
4 x Spring onions
675 gm Ripe tomatoes, skinned, deseeded and quartered
Salt and freshly ground black pepper
2 tbl Fresh basil leaves, torn
1 lrg Cauliflower, cut into florets
Instructions:
Instructions: 1. Heat the oil in a pan and add the onions and tomatoes. Cook for 1-2 minutes.

2. Stir in the seasoning and basil and cook for 1-2 minutes. Meanwhile, cook the cauliflower in boiling, salted water for 4-5 minutes until almost tender. Drain well.

3. Arrange the vegetables on a serving plate and garnish with fresh basil.

NOTES : Jazz up cauliflower with the fresh flavours of tomatoes and basil.

One large cauliflower serves 8 as part of the meal
