*Lumpfish caviar is usually available in the gourmet section of the supermarket and costs between $3 and $4. The black kind looks especially attractive, but the red kind is more in keeping with Christmas or St.

Valentines Day. I paid about $1 more for some whitefish caviar, because I like the flavor better. If you have money to burn, spend more for your caviar, but these inexpensive types are fine to just give some flavor to the rest of the ingredients.

When I make this for just hubby and myself instead of for a crowd, I cut the ingredients down to about 1/3. I then put it in a custard dish that I have lined with saran wrap, packing the mixtures well. When ready to serve, I invert the mold on a plate, remove the wrap and then sprinkle on the caviar.
