Instructions: Peel the celeriac and cut into matchstick strips.
Put into boiling water and blanch for 1 to 2 minutes. Drain and refresh with cold water. Drain thoroughly then quickly toss in the lemon juice. Put the egg yolk mustard sugar and seasoning in a bowl. Whisk until blended then whisk in the oil a drop at a time to make a thick mayonnaise. Stir in the vinegar and cream or yogurt. Taste and adjust the seasoning. Stir in the celeriac. Cover and chill for at least an hour. Serve garnished with chopped parsley. Variation: stir two or three roughly chopped hardboiled eggs into the salad with the celeriac. Serves 6 Email this Recipe:
