For the pork: ----------------
2 tbl red chili powder
2 tsp cumin powder
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 lb pork tenderloins
----------------- For the salsa: ----------------
1/4 cup white wine vinegar
1 tbl dark brown sugar
1 cup fresh pineapple chunks
1 x papaya, peeled and chopped
2 cup cantaloupe chunks
4 x green onions, minced
Instructions:
Instructions: To prepare pork, preheat oven to 350 degrees. Combine seasonings. Rub over all sides of pork tenderloins. Arrange tenderloins in shallow baking dish. Cover and set aside for 15 minutes at room temperature. Uncover and bake for about 45 minutes or until meat thermometer registers 160 degrees.

While the pork is cooking, prepare salsa. Whisk vinegar and sugar together in bowl. Add rest of ingredients and toss until combined. Cover and refrigerate.

Serve alongside pork tenderloins.
