Instructions: Marinate the salmon in basil oil overnight.
Char grill on a griddle pan for 810 minutes turning once. Toss a little mussel and saffron vinaigrette with the salad leaves. Gently heat the remaining dressing then stir in the mussels tomatoes courgettes and chives. Place dressed leaves on each plate top with a salmon steak and spoon round the vinaigrette.
