Instructions: Make the mayonnaise by chopping 1/2 the chilli and add to the mayonnaise, with the juice and the zest of 1/2 the limes and some chopped mint and coriander. Heat up a hot griddle pan on the stove and add the langoustine to the pan with a little oil. Start to add the rest of the ingredients. Add the fresh lime, just cut into quarters and season with salt and pepper. Remove from the griddle pan with all the diced ingredients and serve with the mayonnaise on the side, and some dressed rocket leaves.
