6 x trout, filleted
salt and freshly ground black pepper
1/2 cup butter (approximately)
juice of one lemon
1/4 cup capers
1/4 cup freshly chopped parsley
Instructions:
Instructions: Preheat the oven to 350 degrees F. Cover a baking sheet with aluminum foil and butter it well. Arrange the fish fillets on the foil and sprinkle with salt and pepper. Dot fillets liberally with the butter and cover with another sheet of aluminum foil. Bake eight to ten minutes or just until the fish flakes easily when tested with a fork.

Transfer the fish to hot dinner plates and sprinkle with lemon juice, capers, and parsley. Serve with buttered toast.
