Ingredients:

2 x Chayotes, (mirlitons), peeled cut in half, and pits removed
1 lrg Red bell pepper, cored seeded, and cut into julienne
1/2 tsp Olive oil
2 x Limes, juice of
Instructions:
Instructions: 1. Slice the chayotes as thin as possible and cut into julienne.

2. Combine the chayote and bell pepper in a bowl.

3. Add the olive oil and lime juice and season with salt and pepper.

4. Toss well and let sit for 15 to 20 min. before serving.
