Instructions: Melt the chocolate gently over a low heat. When melted, brush the chocolate into the middle of the pavlova base and leave to set. Mix the cream with the mint and spread evenly over the set chocolate.
Top three punnets of strawberries and add to the pavlova. Dip the remaining strawberries in caramel and garnish around the edges. Make a caramel with the sugar and using a whisk or two forks make straw sugar. Remove and garnish the pavlova with the sugar and fresh mint. Email this Recipe:
