Instructions: Boil the milk with the vanilla pod. Mix the yolks, sugar and flour together. Pour half the milk onto the yolk mixture. Pour the mix back into the pan and boil for 1 minute until thickened.
Halve the passion fruit and remove the flesh, Sieve - add to the custard mixture, mix and taste. Divide the custard mixture between individual ramekin dishes and let cool slightly. Scatter with the caster sugar and caramelise. Decorate with seasonal fruits and serve. Email this Recipe:
