1 tbl	Garlic powder
1/2 tbl	Basil
1 tbl	Thyme
1 tbl	Oregano
1 tbl	Rosemary
1/2 tbl	Marjoram
1/2 tbl	Sage
1/2 tsp	Red pepper
	Rat-A-Tatouille
1 med	Eggplant, peeled and diced
1 tbl	Hot olive oil
2 lrg	Onions, chopped
2 x	Green peppers, diced
2 x	Cloves garlic, crushed
2 x	Zucchini, diced
1 x	16 oz can tomatoes
	Salt substitute to taste
	Pepper to taste
2 tbl	Chopped parsley

Instructions:

Instructions: Checkered Tablecloth Italian Blend

Saute eggplant in olive oil; add and saute onions, peppers, and garlic.

When vegetables begin to soften, add zucchini and tomatoes. Add all remaining ingredients, including Checkered Tablecloth Italian Blend. Cover and simmer 25 minutes; remove cover and simmer 10 minutes more to reduce liquid.
