Instructions: * For a lower fat version you can substitute applesauce
Whisk cornmeal, flour, baking powder & soda, salt in bowl, add cheddar & jalapeno & toss well -In another bowl, whisk together eggs, buttermilk, & butter ,add egg mixture to cornmeal & stir just until combined -Spread in greased 8" square baking pan, bake at 350 for 25-30 mins, let cool 5 minutes NOTES : Linda says: I love to eat this w/ leftover smoked turkey from Thanksgiving.
