Instructions: Heat broth to boiling in medium saucepan.
Stir in couscous, cover and remove from heat. Let stand 5 minutes. Transfer to large bowl, fluff with a fork and let cool 10 minutes. Combine vinegar, oil, garlic and sugar in a small bowl. Whisk together thoroughly. Add cheddar, cucumber, tomato, green pepper, onions and parsley to couscous. Pour dressing over all and toss well to coat. Add salt and pepper to taste. Makes 6 cups.
