Yield:
6 or 7 Biscuits
Ingredients:
Amount Ingredient
1/4 cup White Lily or Martha White flour (self rising)
3/4 cup cake flour
3/4 tsp baking powder (check freshness date)
1/2 tsp baking soda
1 tbl granulated sugar
1/2 tsp table salt
2 tbl unsalted butter, cold and cut into pieces
2 tbl Crisco shortening
1 cup buttermilk
1/2 cup grated Sharp Cheddar cheese
1/2 cup green onions, finely chopped
1/4 cup flour
Instructions:
Instructions: Preheat Oven to 450 degrees F.
Sift first six ingredients together in a large bowl. Using a pastry cutter, or your clean fingers, work butter and shortening into flour, crumbling until it is the texture of coarse crumbs. Add buttermilk, cheese, and green onions.

Stir with a spatula or, work with your hands until the buttermilk and flour to form dough. dont overmix.

Lightly flour work surface with all-purpose flour. Turn out dough onto the surface and press into a ball about 1/2-inch thick and 8 inches in diameter.

Cutting straight downward, cutting dough in circles with a biscuit cutter that is dusted with flour.

Use scraps for additional biscuits. Place biscuits on baking sheet, press lightly down across tops with 3 fingers. Brush tops with melted butter. Bake 10 or 12 minutes at 450 Degrees F. until golden brown.

Remove from oven and serve hot.

Makes 6 or 7 Biscuits
