Instructions: Melt the butter in a small saucepan over moderate heat. Stir in the flour and cook for 2 to 3 minutes, until the raw flour aroma is gone. Add the milk and stir with a wire whisk until the mixture is thick and comes to a boil. Remove from the heat and stir in the egg yolks until well mixed. Add the cheese and stir until the cheese melts, returning it to a low heat if necessary. Season with salt, pepper, and cayenne. Spread the mixture in a shallow pan and allow to cool. Cut into small squares or rectangles, dip in the bread crumbs, in the bean egg, and then in bread crumbs again. Fry in a large skillet with heated butter or oil, turning once, until golden brown on both sides. Drain on paper towels.
