Instructions: Cut butter & cheese into flour until particles are the size of giant peas. Work dough with hands until it cleans bowl; press firmly into ball. Chill 1 hour. Heat oven to 375. Flatten dough with hands; roll 1/16" thick on floured board. Cut into 5*2 1/2" rectangles; spread with 1 level tsp. of preserves, leaving 1/2" at edges. Roll up carefully, beginning at narrow side. Seal well by pinching edge of dough into roll. Place pinched edge underneath on ungreased sheet; press down lightly. Brush with egg white; sprinkle generously with sugar. Bake 15 minutes.
