Instructions: Bring the Brodo di pollo to the boil in a large pan.
Place the egg flour cheese breadcrumbs and butter in a basin. Add pepper and nutmeg to taste and work to a firm paste. Press through a metal colander directly into the boiling broth. Simmer until the noodles rise to the surface about 2 minutes. Pour into individual soup bowls and serve immediately with extra Parmesan cheese. Serves 4 Email this Recipe:
