Instructions: *Pastry:
Preheat oven to 400 degrees. Place water and butter in pan, bring to boil, add sifted flour all at once. Stir vigorously with a wooden spoon over heat until mixture is thick and leaves sides of pan to form a smooth ball; remove from heat and cool slightly. Put cooled paste into small bowl of electric mixer; add eggs, one at a time, beating well after each addition. Spoon or pipe teaspoonfuls of mixture onto greased oven tray; bake in hot oven 10 minutes, reduce heat to moderate, bake a further 15-20 minutes until golden and crisp. Remove from oven and allow to cool. Store in air tight container until required. *Filling: Grate the cheese. Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with whisk. When blended and smooth, add the garlic, pepper, nutmeg. Simmer gently for 5 minutes stirring the bottom regularly to ensure it doesnt burn. Remove sauce from heat and whisk in combined egg yolk and cream. Sauce should be thick and creamy. Cover and allow to completely cool. *To assemble: Make a small hole in each pastry puff and using a piping bag, fill with cheese mixture. Place on a baking sheet and bake 15 minutes.
