Instructions: Try some Fontina cut in cubes. Next, instead of rolling the crust, divide the dough in 2 pieces and roll each out into a circle. Place the bottom circle on a parchment lined rimmed pan (rimmed is important since some cheese may well leak out) or use one circle of dough to line a 10" spring form pan. Scatter the cheese over the top and moisten the edges of the circle with water or milk. Top with the other circle of dough and pinch the edges together. Brush with olive oil and allow to rise until puffy, then bake in a 425 preheated oven for about 20 minutes or until golden brown. You cna add sauteed vegetable in with the cheese if you wish.
