Instructions: Toast almonds on oven tray in 375 degrees oven about 5 minutes. Slice top from each tomato, scoop out seeds, reserve 3 tablespoons pulp and add to filling. Beat cream cheese until smooth, stir in almonds, red pepper, chives, and reserved tomato pulp. Place filling in tomatoes, refrigerate 1 hour or until firm.
