Instructions: Combine egg yolks, water, sugar, and salt in a medium bowl; beat with a wire whisk until blended. Stir in cottage cheese. Add flour and raisins; stir well.
Beat egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into cheese mixture. Pour oil to depth of 1/8-inch into a large heavy skillet. For each latke, drop 1/4 cup mixture into hot oil. Fry until golden, turning once. Drain. Serve warm. This recipe yields 14 latkes. Yield: 14 pancakes Email this Recipe:
