Crust
8 whl graham crackers (16 2 1/4 x 2 1/4-inch squares)
2 tbl brown sugar
1 tbl unsalted butter melted
Filling
2 x eggs
2/3 cup low-fat (1% fat) cottage cheese
1/2 cup granulated sugar
1 tsp vanilla
1 tsp almond extract
Instructions:
Instructions: Crust: Crush the graham crackers, in a food processor, or by placing them in a plastic bag and rolling them with a rolling pin. Stir in the brown sugar and butter, and press the mixture into the bottom and up the sides of a 9-inch pie pan.

Filling: Place all of the ingredients into the work bowl of a food processor, or into a blender jar, and process until smooth. Preheat oven to 350F. Pour the batter into the prepared crust. Place a pan of water on the lowest rack. Bake cheesecake for 45 minutes.

Yield: 8 servings

Note: Preparing cake without crust reduces calories to 166, and fat grams to 2.1 per serving.

NOTES : This version of cheesecake is much more similar to a traditional cheesecake. Youll find the crust a bit crumbly, but other than that it mimics cheesecake quite well.
