Instructions: Crush cookies to make about 2/3 cup. (I used Peek Frean-Nice) Sprinkle on bottom of regular cake pan.
Melt chocolate over double boiler, or for 1 and 1/2 to 2 minutes, in microwave, turning every fifteen seconds, and checking as to not burning them. Add one egg white at a time, beating with electric mixer as soon as they are added until smooth. Then add the vanilla and sour cream, and beat until smooth. Add cream cheese, cocoa, and sugars and beat until smooth. Put the cheese mixture over the crumbs, and bake at 400 degrees for 15 minutes, then turn oven down to 240 and bake for approximately 45 more minutes, until just set. If it is baked too long, it could become dry. Chill for 2 hours. To serve, you may like chocolate curls on top, or little chocolates. I know it is not really that low fat, but it is lower fat than the traditional cheesecake. Its worth it for Valentines. Email this Recipe:
