1/4 cup vegetable oil
1 cup cornflake crumbs
1/2 cup grated Parmesan cheese
1/2 tsp salt divided
1/2 tsp freshly-ground black pepper divided
Instructions:
Instructions: Preheat the oven to 400 degrees. Coat a large rimmed baking sheet with nonstick cooking spray.

Place the oil in a shallow dish. In another shallow dish, combine the cornflake crumbs, cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper; mix well.

Season the catfish fillets with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Dip the seasoned fillets in the oil, then in the crumb mixture, coating completely. Place on the baking sheet.

Lightly coat the tops of the fillets with nonstick cooking spray then bake for 18 to 20 minutes, or until the coating is golden and the fish flakes easily with a fork. Serve immediately.

This recipe yields 6 servings.

Comments: You can buy ready-made corn flake crumbs, or make your own by crushing corn flakes very finely.
