Instructions: Prep: 5 min, Cook: 15 min.
When potato is almost through baking, melt margarine in small nonstick skillet with garlic, sauteing garlic about 5 minutes to release flavors. Chop spinach, and add to skillet, stirring well to coat with margarine. Cover, turn off heat and steam 5 minutes. Sprinkle with freshly ground black pepper. Slit baked potato in half the long way. Stuff with low fat cheese, spinach and sour cream. Serve at once. Email this Recipe:
