6 x boneless skinless chicken breast halves
1/2 tsp salt
1/2 tsp freshly-ground black pepper
4 oz Monterey Jack-pepper cheese cut into 6 chunks
1 tbl seasoned bread crumbs divided
Instructions:
Instructions: Preheat the oven to 350 degrees.

Between 2 pieces of waxed paper, gently pound the chicken to 1/4-inch thickness with a mallet or rolling pin. Sprinkle both sides of each breast lightly with the salt and pepper then place a cheese chunk in the center of each piece of chicken and roll each breast tightly, tucking in the sides as you roll.

Place the rolls seam-side down in medium-sized muffin tins that have been coated with nonstick cooking spray. Sprinkle 1/2 teaspoon of the seasoned bread crumbs and some paprika over each roll. Bake for 25 to 30 minutes, or until no pink remains and the juices run clear. Serve immediately.

This recipe yields 6 servings.

Comments: To give these even more zip, top each roll with a tablespoon of salsa just before serving.
