Ingredients:

2 cup rice, cooked
1 cup Cheddar or Mozzarella cheese, shredded
1 can tuna, (6 1/2 oz.) drain &
flake
1/2 cup green bell pepper or black olives, finely chopped
1 tbl instant chopped onions
1 tbl dried parsley flakes
1 tsp seasoned salt
2 x eggs, beaten
Instructions:
Instructions: Combine rice, cheese, tuna, green bell pepper, onion, parsley and seasoned salt. Stir in eggs and mixing thoroughly. Spray 6 muffin cups with Pam.

Divide rice mixture evenly among cups. Bake in a 375 degree oven for 15 minutes or until
lightly browned. Loosen with spatula and arrange on serving plate. Serve with Tangy Butter Sauce.

TANGY BUTTER SAUCE:
Combine 1/4 cup melted butter or margarine 1 tablespoon lemon juice, 2 teaspoons seasoned salt and 1/2 teaspoon dried parsley flakes. Spoon over muffinlettes.

Serves 6.
