Instructions: Preheat oven to 350 F.
Line muffin tins with paper & foil cupcake liners (available in baking section with paper cupcake liners). Beat cream cheese and sugar until creamy. Add eggs and vanilla extract and beat until smooth. Place a chocolate wafer in each muffin liner; top with a dollop of cheese mixture. Bake 18 to 20 minutes; remove from tins and let cool. Top with cherry pie filling. Chill overnight in a covered container before serving (a 9 x 13-inch cake pan with lid works great). Email this Recipe:
